Black Forest Cake (Schwarzwälderkirschtorte)

 

Black Forest CakeIngredients:
Serves 14

Cake
6 eggs
1 1/2 cup (300 g) sugar
4 tbs Water
1 1/2 cup (220 g) flour
1 tbsp. (25 g) cacao
1/3 teas. Cinnamon

Filling
2 - 760 ml jars of sour cherries pitted
1 1/2 cup (300 g) Sugar
2 tbs starch
4 tbs kirsch schnapps
750 ml whipping cream
2 tbs vanilla extract, or 3 packs of vanilla sugar

Instructions for Cake:

The cake biscuit works best if baked the day before.
Separate egg whites from yolks and set aside. Beat yolks with sugar and water until very creamy. Sift flour, cacao and add with Cinnamon to mixture. Stir well.
Beat egg whites until stiff and fold into mixture very carefully until incorporated.
Pour batter into 26 or 28 cm spring form pan, buttered and sprinkled with bread crumbs. Shake out any excess crumbs before adding the batter.
Pour in the batter and bake at 350 F for about 50 min.
Insert skewer in the middle of cake, if it comes out clean it is done, if dough sticks to the skewer bake for a little bit longer.
Cool for a little bit in pan; then take out of spring form and cool completely.
 Cover with plastic wrap until next day.

Instructions for Cherry Filling

Take 2 tbs starch and 200ml of the cherry liquid and stir until smooth. Pour cherries in pot with sugar until boiling, add starch slowly, stirring constantly a little bit at a time, until thick.
You might not need all the starch. Set aside until cool {next day}

Next day:

Pour cold whipping cream in bowl, with vanilla and beat until stiff. Set aside.
Also take your cherries from day before and add the schnapps, stir well, set aside.
Cut cake equally twice, horizontally until you have 3 equal pieces or layers.
Put the top piece cut side up, on the bottom of a cake platter,  add ½ of the cherry filling and spread close to the edge.
Add 1/3 of the cream and also spread close to the edge.
Put next piece of biscuit on top of cream and repeat the last steps.
Place the last piece of biscuit cut side down.
Spread last 1/3 rd of cream all over top and the sides until nice and smooth.

Sprinkle shaved dark chocolate over top.
Refrigerate
Excellent for freezing

Sour Cherries can be found at the Grocery store or Delicatessen.
I use vanilla sugar instead of extract which can also be found at the Delicatessen.
Or you can make your own, just place a vanilla bean in regular sugar for a while.
